Retire do lume, junte as gemas e bata muito bem. Neste caldo, escalfe os filetes durante 10 minutos. Depois descaroçamos as maçãs, guardando os caroços para a calda, e fazendo uns cortes ligeiros na casca para a maçã não rebentar.&lt;br /&gt;&lt;br /&gt;Colocar as maçãs num pirex, colocar um pau de canela dentro do orifício de cada maçã e colocamos os caroços das maçãs dentro do pirex. Encha os orifícios das maçãs com açúcar, regamos as maçãs com o Vinho do Porto e voltamos a colocar um bocadinho de açúcar no rebordo do orifício. Tempere com sal e pimenta e leve a alourar ligeiramente em azeite quente, retire.&lt;br /&gt;&lt;br /&gt;Corte as cebolas em quartos e lamine os alhos e coloque no azeite com a folha de louro, deixe cozinhar lentamente até que a cebola fique transparente. Adicione o Vinho do Porto com sal e pimenta.&lt;br /&gt;&lt;br /&gt;Ponha a carne no molho para terminarem de cozinhar. Nesse caldo, escalfe as postas de pescada durante 10 minutos. Retire-as depois do caldo e conserve-as quentes numa travessa colocada sobre um recipiente com água a ferver. Lave os cogumelos e corte-os em quartos ou em lâminas. Descasque as cebolinhas.&lt;br /&gt;&lt;br /&gt;Leva ao lume uma frigideira com a banha, deixe aquecer bem, junte as bifanas e deixe-as fritar de ambos os lados.
